I love sweet potatoes in all its forms. A spiralizer takes this root vegetable to a whole new level though. It actually tastes different because of it’s shape. I dare say it tastes sweeter. It might be my imagination of course but I could swear is tastes sweeter and even more delicious.
Serve the sweet potato noodles with a simple chicken breast and the most amazing creamy and flavorful avocado cilantro lime sauce and you have a 15-minute prep dinner for Gods and Goddesses!
How to make sweet potato noodles
All you need is some sort of Spiralizer. Let me post some affiliate links here for you to consider if you are in the market for one:
There are cheap spiralizers* that I’ve heard work just fine, require quite some elbow grease though. It’s hard work to get the job done but you’ll get it done eventually. The question is, will you ever want to make sweet potato noodles again, haha.
The one I have is like very similar to this semi professional spiralizer*. I love it. It’s still fairly inexpensive and it does a really great job and getting those perfect curly noodles. It does require some effort too but not even close to as much as with the cheap spiralizer.
If you love vegetable noodles more than life or maybe you have to eat gluten-free and don’t love the rice/quinoa/chickpea pastas on the market I would suggest getting this super handy dandy ultra professional spiralizer*. This obviously assuming you have a kitchen aid stand mixer. If your don’t, get the semi professional spiralizer :)

The most delicious sauce for spiralized sweet potato noodles

How to cook Sweet Potato Noodles
Sweet potatoes can take forever to cook when roasted as a whole or boiled. In noodle form they cook in NO time!
Simply preheat a large pan over medium heat, add a dollop of oil and then sauté for a couple of minutes. That’s it!
No need to wait for water to boil, no need to boil the sweet potato noodles. Just stir-fry and they’re ready to eat!

The Best Sweet Potato Noodles Recipe
Ingredients
- 2 chicken breasts
- 1 large sweet potato
- 1 bunch cilantro
- 1 jalapeno
- 1 avocado
- 1 lime
- 1/3 cup water
- 1 tsp sea salt
- Salt
- Pepper
Instructions
- Peel and spiralize sweet potato. Then sautée 4-5 minutes in a large pan stirring constantly. Add to bowls.
- Heat a small pan over medium heat, add a splash of oil then grill salted chicken breasts 4-6 minutes per side (depending on thickness) over medium heat until nice and brown and juices run clear. Pepper once you flipped the breasts. Cut into stripes and place on top of sautéed sweet potato noodles.
- Prepare sauce by dissolving sea salt in warm water. Add washed cilanto, washed and seeded jalapeno, peeled and pitted avocado, lime juice and salt water to high speed blender and blend until creamy. Add more water if necessary. Pour sauce over sweet potato noodles and chicken and enjoy!

Herbs are for added flavor and can be left out, however, you could use parsley, or if you want an onion-type flavor you could use chopped chives.

I am of Peruvian Heritage, and the cilantro sauce reminds me a lot of cilantro sauce (salsa de aji verde) that we make for dipping bread. I added a clove of garlic and a little bit of olive oil to the sauce and it came out so delicious!

Hi Glynda, I only just saw your comment!!! I hope your noodles turned out great! You can use a splash of avocado oil or nothing at all. The noodles are “wet” so they release steam and don’t stick to the pan. If I remember well I didn’t use anything to sautée them.

Hi Mak, yes I think it would keep well. The sweet potato might release some liquid but other than that I don’t see how it won’t stay delicious. Make sure you store in an airtight container so the avocado sauce doesn’t brown. The ones I love best are the glass containers with plastic lid that have a rubber band around the edges. Those are truly air-tight.
