It’s been a while since I created a one of a kind salad dressing. The last amazing one was probably this Maple Mustard Balsamic Dressing. It’s all about the dressing when it comes to salads. A salad can taste meh or UH-MAZING depending on how good its dressing is.
The better the dressing, the more salad you’ll want to eat! So let’s dive right into the ingredients:
How to make a delicious broccoli slaw dressing
As for every dressing we have a basic dressing formula. Oil, acid, sweetener, emulsifier, taste giver. My favorite emulsifier is mustard! Dijon mustard to be specific. My favorite acid when there is many ingredients in a dressing is lemon. The best sweetener when you work with herbs is honey. A great herb for a dressing of crunchy salads is estragon. Give some extra flavor with garlic, salt and pepper. Top with a neutral oil such as avocado oil and you just created the best broccoli slaw dressing ever ;)
Switch out the honey for agave nectar and make it vegan. All the other ingredients I recommend not changing. They are all crucial for success and taste.
What to serve broccoli slaw with
Broccoli slaw is an amazing crunchy salad that will keep you full for quite a while so go ahead and eat is as a main dish. I like to add a little protein to my dishes and since the broccoli slaw was quite flavorful I wanted to keep the protein simple. In my opinion it pairs extremely well with a baked white fish filet. I just put a couple drops oil, salt and pepper on them. Popped them in the oven for 10 minutes and served them with my super easy broccoli slaw salad.
I can imagine it tasting great with a simple chicken breast, too. Or with some navy beans mixed in.

The best Broccoli Slaw Dressing
Ingredients
- 1 string estragon
- 1 clove garlic
- 1/4 tsp sea salt
- 1/4 tsp Pepper
- 1 Tbsp dijon mustard
- 1 Tbsp honey
- 1/2 lemon
- 5 Tbsp avocado oil
- 1 bag Mann's broccoli cole slaw
Instructions
- Remove all leaves from string of estragon, wash and dry. Peel garlic and coarsely chop. Add all ingredients to your blender or a bowl in which your immersion blender fits. Blend well and pour over Mann's broccoli cole slaw. Mix and enjoy!

Would this be good if made the day before or is it best as a day-of dish?

You can make a big batch of dressing and eat for several days. Simply keep it refrigerated. Because of the estragon (tarragon) I wouldn’t keep for more than 5 days though. Don’t mix Broccoli Slaw with dressing ahead of time. Bring with you in separate containers and then pour dressing over slaw just before eating.

Hi Geri, I find it in any supermarket where all the fresh herbs are. It’s sometimes called estragon, sometimes tarragon. Ask in the produce section of your local grocery store.
