Ingredients
1cupBasmati white rice
1tspturmeric
1/2tspsea salt
1cupwater
FOR THE GOURMET VERSION
2tspavocado oil
1yellow onion
2cloves garlic
1/4cupchopped parsley
1tspcumin
1tspaji amarillo
1/2cuppeanuts
1/2cupraisins
Instructions
Add rice, turmeric, salt, and water to your Instant Pot and stir well.
Seal the pot and set it to 3 minutes on high pressure. Then let pressure release naturally.
Once the safety pin dropped it's safe to open the pot and fluff up the rice and serve.
FOR THE GOURMET VERSION: Peel and finely chop onion and garlic. Chop parsley.
Preheat a large pan over medium heat, once hot add avocado oil and onion and stir fry until translucent.
Add garlic and stir a bit more. Then add cumin and ají and stir until fragrant.
Add peanuts, raisins, and cooked yellow rice, as well as chopped parsley. Stir to combine and serve.
