Total Time 40minutes
2 1/4cupsold fashioned rolled oats(220 g)
1/2cupcold butter(120 g)
3/4cupmaple flakes(if you can't find any, the best alternative is coconut sugar, the tart won't be as pretty though because coconut sugar is very dark and covers the apples completely)
Preheat oven to 400 F (200 C).
Process oats and sea salt in a food processor or high-speed blender until it reaches a grainy flour like consistency. Similar to coarse salt at the very least.
Add cubed cold butter to processor and while processing add egg yolk, maple syrup and ice water.
Once well combined, remove from processor and place on a piece of wax paper or parchment paper. Knead a little and then form into a ball. The butter should be well incorporated but the dough cold. (If too much kneading was necessary to incorporate the butter. Cover the dough with clingfilm and put in the freezer for 5-10 minutes.)
Cover the dough with another sheet of wax paper and roll out into a circle.
Peel off wax paper from top and flip the dough over quickly into the tart pan. Peel off the other sheet and press the dough into the sides.
Slice apples thinly (1/4" max) and arrange in a circle until all the bottom is covered.
Spread maple flakes evenly on apple slices.
Bake for 30-35 minutes or until golden brown.
Let cool completely before removing the from the tart pan or the sides will break.
