This Instant Pot Mashed Potatoes recipe is by far the easiest, creamiest, and most delicious way to make a classic side dish that pairs well with nearly everything!

2poundsstarchy potatoes*peeled and quartered

2/3cupmilkany dairy or non dairy milk works
Peel and rough-chop the potatoes (approximately 1- to 2-inch chunks), and add to the Instant Pot together with sea salt and cover with water.
Put on the lid and turn the valve to the sealing position then set the Instant Pot to 7 minutes on high pressure.
Release pressure manually by turning the valve to the venting position. Drain the potatoes well, and return to Instant Pot. The better you drain them the more flavorful and creamy they will be.
Add the butter and milk and mash thoroughly until smooth and creamy.
Garnish as desired, serve and enjoy!
* for mashed potatoes you need any type of potato that is high in starch. Avoid waxy potatoes or you'll end up with a gooey gummy mass. In North America starchy potatoes tend to be sold in bags that say "perfect for mashed potatoes". When in doubt use Russet potatoes. They always work.
