Orecchiette with Peas and Pancetta

Ingredients

orecchiette

pancetta or bacon

onion

clove
garlic

white wine
(preferably dry)

35% cream
1/2
cup
peas
(fresh or frozen but rinsed and drained)
salt
pepper
Instructions
Bring 3 liters of water to the boil in big pot.
Peel and finely chop onion.
Peel and crush garlic.
Cut pancetta (or bacon) into fine stripes.
Heat a pan over medium heat.
Add pasta to boiling water and cook as instructed on the package (Make sure not to overcook. Keep and eye on it and keep testing).
Add pancetta (or bacon) to pan and fry for about 1 minute for it to release some fat, add chopped onion and garlic and sauté until translucent.
Add whine and wait for it to evaporate to about half the amount.
Add cream and peas, bring to the boil while stirring. Once boiling remove from heat immediately and keep stirring for another minute or two.
Drain pasta and add to sauce in pan. Stir to mix well and serve steaming hot.
