Ever wondered how to cook sweet potato noodles? This is a Sweet Potato Noodles Recipe made with spiralized sweet potato, chicken and super creamy Avocado Cilantro Sauce! The absolute BEST way to eat fresh sweet potato noodles!
Peel and spiralize sweet potato. Then sautée 4-5 minutes in a large pan stirring constantly. Add to bowls.
Heat a small pan over medium heat, add a splash of oil then grill salted chicken breasts 4-6 minutes per side (depending on thickness) over medium heat until nice and brown and juices run clear. Pepper once you flipped the breasts. Cut into stripes and place on top of sautéed sweet potato noodles.
Prepare sauce by dissolving sea salt in warm water. Add washed cilanto, washed and seeded jalapeno, peeled and pitted avocado, lime juice and salt water to high speed blender and blend until creamy. Add more water if necessary. Pour sauce over sweet potato noodles and chicken and enjoy!
