Midnight Cookies are made of all insomnia-fighting ingredients! The best midnight snack recipe ever! Refined sugar-free but still deliciously sweet and full of healthy fats to keep you satisfied all night.

  1. Preheat oven to 350 F.
  2. Put all wet ingredients and dates in a blender and blend until smooth.
  3. Combine wet and dry ingredients.
  4. Scoop out one large ice cream scoop per cookie and place on a parchment paper lined baking sheet and flatten with your fingers to about 1/2 inch thickness.
  5. Bake for approximately 20-25 minutes until golden. Beware of not burning the bottoms.
  6. Cool on a cookie sheet and store in an airtight container preferably in the fridge.
