Ingredients
5-6shallots1 cup sliced
1/4cuplime juice
2Tbspapple cider vinegar
1tspcoarse sea salt
1/2Tbspmaple syrupoptional
Instructions
Peel and finely slice the shallots. (See notes)
In a small jar mix lime juice, apple cider vinegar, and sea salt (and maple syrup if using).
Add brine and sliced shallots to a sealable jar or airtight container and place in the fridge for at least 30 minutes and up to a week.

Notes
If you're not a big fan of the spiciness of onions, simply put the sliced shallots in a colander and place the collander on a bowl. Then pour boiling water over the shallots and let them soak for about 30-60 seconds and then drain well. This removes the oniony spiciness but also softens the onions quite a bit. I like the spiciness and I like the crunch of the unrinsed shallots.
