I created this 20-Minute Refrigerator Jam out of total despair. My son had asked me many days in a row if I could buy jam because we ran out several weeks ago. I kept telling him, yes sure, please, you have to remind me when I’m about to go to the store. I keep forgetting. One evening I told him I couldn’t read him a story, that daddy was going to read it, because I had to run to the store before it closed. He immediately exclaimed I shouldn’t forget to buy jam. Of course not. Thanks for the reminder.
Off I went to the store, bought everything I had on my list and completely forgot the jam!! OH NO!!! Thankfully I brought home raspberries and strawberries so the solution to my dilemma of having a boy wake up and be totally disappointed with his forgetful mother was to quickly MAKE jam. Phew!
It’s a refrigerator jam because you have to keep it in the fridge, you can’t store it on the kitchen counter. Other than that it’s totally equal to any kind of jam. It tastes amazing on toast and it tastes beyond amazing mixed into overnight oats. My husband currently eats the Dark Chocolate Cherry Vegan Overnight Oats and 20-Minute Refrigerator Jam Overnight Oats alternately every single morning.The number 1 thing I love about this refrigerator jam is: it takes 20 minutes to be able to serve it!!! Like how awesome is that?? 20 minutes from start to finish, but only 1 minute real work. It is super healthy, full of vitamin C and contains not one gram of refined sugar.
If you don’t like the grainy chia seeds you can also grind them before and the jam will have a jelly-like texture. I love the crunch in the jam though, so I keep them whole. I especially like how it looks. So pretty!
How long does refrigerator jam last?
Refrigerator jams don’t last as long as store bought shelf jams. They don’t contain any preservatives and no refined sugar and thus only last as long as berries would last in the fridge. Depending on how ripe the berries you bought were up to 1 week maximum. If you don’t think you will eat as much in one week I recommend making only half the amount. In the end, it only takes a minute of work and 20 of waiting time, right ;)
20-Minute Refrigerator Jam
Ingredients
- 1 cup raspberries
- 1/2 cup strawberries
- 1 vanilla bean
- 1/4 cup maple syrup
- 1/2 cup white chia seeds
Instructions
- Wash berries, drain and add to blender, add vanilla bean seeds and maple syrup and blend until smooth.
- Add chia seeds while blender is on, blend for about 30 seconds and pour into a sealable glass jar.
- Refrigerate for minimum 20 minutes.
- Keep refrigerated when not using. Can be stored for up to 1 week depending on ripeness of berries. (If you only eat little jam, I recommend making half the amount only).

This looks delicious and fresh. I have been making some with all the strawberries I am growing this year. Love how easy it is to make and that contains no artificial ingredients or refined sugars.
