It seems we are having kind of an Italian week here this week. First pasta, now pizza…The thing is, this week spring started in Montreal and we have been enjoying the sun and the jacket-less life outside in the wind for hours and hours with visits to the park, bike rides, market visits and the like and coming home around like 5:30, 6:45 being bedtime for the two kiddos, may potentially result in a stressful evening. Make dinner, photography session, feeding, pajamas on, teeth brushing and good-night-story have to all fit into 1 hour and 15 minutes. Pasta is quick to prepare and pizza, too. If you have the dough ready of course. I had been to my favorite health food store this week and grabbed my favorite clean ingredient pizza base from the shelf right behind the cashier predicting I would need a quick-fix-dinner this week. I am so glad I did and I am so glad we came home so late and I had to think of a fast dinner because this Spinach Camembert and Egg Pizza turned out DELICIOUS!!! It was ready in 20 minutes including preheating-time for the oven. Isn’t that awesome!
It is crisp and moist and saucy and fresh and cheesy and, ugh! Is there a better word for delicious so I don’t have to keep saying delicious because it was so delicious I want to keep saying how delicious it was? Ha! Well, I think you get the point.
